Pink peppercorn is the dried berry of a South American pepper tree — usually the Brazilian pepper Schinus terebinthifolia or the related Peruvian pepper Schinus molle — and despite the name it is not a true pepper at all, but a member of the cashew and mango family. The brittle, papery rose-red shell is sweet, fruity and faintly resinous with only a mild, fleeting bite, and it is prized as much for its decorative colour as for its delicate flavour.
