Grey mullet is the firm, mild, slightly nutty white-to-pinkish flesh of the flathead grey mullet (Mugil cephalus) and its kin — silver, torpedo-shaped fish that graze the muddy floors of estuaries, lagoons and warm coasts around the world. A humble, abundant table fish in its own right, the mullet's most celebrated gift is its roe: salted, pressed and dried, the egg sacs become bottarga, one of the oldest and most prized delicacies of the Mediterranean.
