Arame is a mild, faintly sweet sea vegetable made from Eisenia bicyclis, a brown kelp of the order Laminariales harvested off the Pacific coast of Japan and Korea. Sold as glossy, near-black threads, it rehydrates into tender brown strands prized for its gentle flavour and the way it carries a sweet-savoury simmer.
What to look for, from jet black, bone dry, loose threads to faded, damp, clumped.
