Munster — properly Munster-Géromé — is a soft, washed-rind cow's-milk cheese from the Vosges mountains straddling Alsace and Lorraine in north-eastern France. Behind a sticky, moist orange-to-russet rind lies a pale ivory, supple paste that ripens from creamy and mild when young to soft, almost runny and intensely flavoured when mature. It is famous for a powerful, penetrating smell that belies a milder, savoury, meaty-spicy taste, and is eaten on bread, melted over potatoes, and traditionally dusted with caraway or cumin.
