Shrimp paste is a fermented condiment made from tiny shrimp or krill ground with salt, then left to break down and dry into a dense, pungent block or moist paste. A foundational umami seasoning across Southeast Asia and southern China, it is known as belacan in Malaysia, kapi in Thailand and Cambodia, terasi in Indonesia, bagoong alamang in the Philippines and ngapi in Myanmar.
