Livarot is a soft, washed-rind cow's-milk cheese from the Pays d'Auge in Normandy, France. A squat cylinder wrapped around its side with thin bands of reed or paper, it has a sticky, glossy orange-to-brown rind and a supple, springy golden-ivory paste. Strongly aromatic and deeply savoury, it is one of Normandy's oldest cheeses and is nicknamed "Le Colonel" for the five bands that ring it like an officer's stripes.
