Zhug (also spelled s'hug, skhug or zhoug) is a fiery Yemeni chili paste built from fresh hot green (or red) peppers pounded with coriander leaf, garlic and warm spices — most characteristically cardamom and cumin. Carried to Israel by Yemenite Jews, it has become a mainstream Middle Eastern condiment, spooned over hummus, falafel, grilled meats, eggs and flatbread wherever a bright, herbaceous heat is wanted.
