Yuzu juice is the tart, intensely fragrant pressed juice of the yuzu, a knobbly East Asian citrus grown for its perfume rather than its flesh. Sold bottled as a finishing acid, it is sharply sour with a floral, resinous aroma that sits somewhere between lemon, lime, grapefruit and mandarin, yet is unmistakably its own.
