Yerba mate is a caffeinated herbal infusion brewed from the dried, shredded leaves and twigs of Ilex paraguariensis, a holly native to subtropical South America. Traditionally sipped hot through a metal straw from a shared gourd, it is the national drink of much of the Southern Cone — grassy, vegetal and bracingly bitter.
