The yellowfoot (Craterellus tubaeformis), also called the winter chanterelle or funnel chanterelle, is a slender, thin-fleshed wild woodland mushroom with a small brown, funnel-shaped cap raised on a striking hollow yellow-to-ochre stem. A close relative of the golden chanterelle, it is foraged from the forest floor — often from damp moss and rotting conifer wood — where it grows in partnership with tree roots, and it is prized above all for its lateness: it fruits deep into autumn and, in mild regions, right through the winter, long after most other choice mushrooms are gone. Milder than the golden chanterelle, it carries a gently fruity, earthy aroma and a firm, faintly chewy bite that holds up well in a slow saute.
