Xylitol is a five-carbon sugar alcohol (polyol) that tastes almost exactly as sweet as table sugar but carries about 40% fewer calories. A white, free-flowing crystalline powder, it dissolves with a pronounced cooling bite, does not feed the bacteria that cause tooth decay, and barely raises blood sugar — which has made it a fixture in sugar-free gum, mints, "diabetic" baking and dental products.
