The wood ear (genus Auricularia) is a thin, ear-shaped jelly fungus that grows in bracket-like clusters on dead and dying hardwood. Almost flavourless on its own, it is prized in Chinese, Korean and Japanese cooking for its glassy black colour and its distinctive springy, crunchy-yet-gelatinous bite, which it keeps even after long cooking.
