Modernist starch

Wondra is an instantized, "quick-mixing" flour — a low-protein wheat flour that has been pre-cooked and agglomerated into fine, free-flowing granules that dissolve in liquid without lumping. It is not a pure starch but a functional flour, valued in the kitchen for two things: whisking smooth, lump-free gravies and sauces, and dusting a thin, delicate, crisp coating on fish and cutlets.
