Rapsani

Rapsani is the rounder, riper face of Xinomavro: a dry red from the south-eastern foothills of Mount Olympus in Thessaly, made not from Xinomavro alone but blended in roughly equal parts with two local partners, Krassato and Stavroto. The blend and the warmer, lower-altitude sites soften Naoussa's famous austerity into a more approachable, red-fruited and herbal wine — still savoury and firmly structured, but plusher and more generous.
