San Gimignano is Tuscany's white wine in a region built on red, and it holds a place in Italian wine law that nothing else does: on 3 March 1966 it became the first wine in the country to be granted DOC status. It is lean, dry and saline, with lemon and green apple over white flowers and a dry bitter-almond finish that is the variety's unmistakable signature.
