Bolgheri Vermentino is the Tuscan coast's fragrant, sun-warmed take on the Mediterranean's great seafood white: a dry, unoaked wine from the maritime Maremma south of Livorno, riper and rounder than its cooler Sardinian and Ligurian cousins, with white peach and ripe citrus over wild coastal herbs and a bright, saline mineral lift. Grown in a zone made famous by its Cabernet-based "Super Tuscan" reds, it is nonetheless a serious sea-facing white, built for the grilled fish and shellfish of the Tyrrhenian shore.
