Txakoli

Txakoli (Basque Txakolina) is the pale, bracingly high-acid, faintly spritzy white of the Basque Country in northern Atlantic Spain — a lean, low-alcohol wine made mostly from the native Hondarrabi Zuri grape that smells of green apple, lemon and lime, cut grass and a saline sea breeze, and is the definitive pour of the pintxos bar, traditionally splashed from a height to rouse its slight prickle of carbon dioxide.
