Amontillado

Amontillado is the amber, nutty middle child of Sherry: a dry fortified wine from Andalusia that begins life as pale Fino under a veil of flor, then loses that veil and finishes by ageing in slow contact with air. The result sits between the bone-pale Fino and the dark, robust Oloroso — deeper in colour, drier than its reputation, and stamped with hazelnut, toasted-almond and a savoury, saline tang.
