Sherry is the great fortified white wine of Andalusia in southern Spain, made around the city of Jerez de la Frontera from the neutral Palomino grape and aged in the traditional solera system. It is not one wine but a family of styles running from the bone-dry, tangy, flor-aged Fino and Manzanilla through the nutty Amontillado and rich, oxidative Oloroso to the lusciously sweet, treacle-dark Pedro Ximénez. Almost all Sherry begins as a dry wine; sweetness, where present, is added later. It is protected by Spain's first denominación, D.O.P. Jerez-Xérès-Sherry.
