Pessac-Léognan is the fine-wine heart of the Graves, and its dry whites are the aristocrats of white Bordeaux: barrel-fermented, Sémillon-led blends of waxy lemon, fig and toasted almond, built on deep gravel soils to age for a decade or more. Where Chablis is steel and stone, this is a richer, oak-framed dry white — broad and waxy from the Sémillon, lifted and green by its Sauvignon Blanc partner — that grows honeyed and complex in bottle.
