Sancerre is the bone-dry white Sauvignon Blanc of the eastern Loire Valley in France, grown on chalky Kimmeridgian limestone and flinty "silex" soils that give it its famous mineral, almost gunflint edge. It is the textbook benchmark of cool-climate, unoaked Sauvignon Blanc: pale, racy and high in acid, smelling of grapefruit and lemon, gooseberry, blackcurrant leaf and fresh-cut grass over a smoky, stony mineral core.
