Pouilly-Fumé is the bone-dry white Sauvignon Blanc grown on the right bank of the upper Loire in France, directly across the river from its near-twin Sancerre. Made over a high proportion of flinty "silex" soil, it is the appellation most associated with the grape's smoky, gunflint minerality — racy, high-acid and pungent, smelling of grapefruit and gooseberry, cut grass and struck flint over a stony, chalky core.
