Provence rosé is the pale, bone-dry pink wine of southern France, blended chiefly from Grenache, Cinsault and Syrah and made by giving the dark grapes only a few hours of skin contact before pressing. The result is a wine the colour of a faint blush — onion-skin, peach or pale salmon rather than candy pink — that smells of white peach, redcurrant, citrus zest and dried herbs, and tastes crisp, light-bodied and dry, with high refreshing acidity and almost no tannin.
