Rosé is pink wine — made from dark-skinned grapes given only brief contact with their coloured skins, so it takes on a blush of colour but little of the tannin of a red. As a general still style it spans a spectrum: pale, bone-dry Provençal and Spanish rosados; deeper, fuller Tavel from the Rhône; and the softer, off-dry blush wines of the New World. Most dry rosé smells of red berries, peach, citrus and a floral or herbal lift, and tastes crisp, light-bodied and refreshing, with brisk acidity and barely any tannin — a wine that lives between white and red.
