Clare Valley Riesling is Australia's benchmark dry white: a bone-dry, laser-sharp wine of piercing lime and green-apple acidity, white flowers and a steely, almost flinty mineral cut. Where the classic Mosel style is gentle and off-dry, the Clare style is racy and finishes bracingly dry, and with bottle age it throws a famous toasty, kerosene-like note.
