Prosecco is Italy's hugely popular sparkling wine, made mostly from the Glera grape in the Veneto and Friuli regions of the north-east and given its bubbles by a fast, tank-based second fermentation rather than the bottle method of Champagne. It is light, frothy and easy-going — pale straw-gold, gently fizzy, low in alcohol and usually just off-dry — smelling of fresh pear, green apple and white blossom, and is the everyday aperitivo of Italy and the base of the Aperol Spritz.
