Pinot Noir is the great light-bodied red of cool-climate viticulture: a thin-skinned, early-ripening black grape that makes pale, translucent, low-tannin wines of bright acidity, silky texture and red-fruit perfume. It is the red grape of Burgundy, where it has been grown for some two thousand years, and a principal grape of Champagne. Famously fickle to grow and transparent to where it is planted, it is prized for elegance and finesse rather than power, and counts among the most food-friendly of all reds.
