Montilla-Moriles

Montilla-Moriles is the true home of Pedro Ximénez — a sun-baked inland Denominación de Origen near Córdoba where PX is the dominant grape rather than a mere sweetener, and where its sweet wine reaches its most concentrated expression. The intensely hot, dry climate raisins the grapes on the vine and on the mat, giving an opaque, treacle-thick fortified wine of raisin, fig, date, molasses and dark chocolate.
