Manzanilla is the lightest, most delicate and most saline of all Sherries: a bone-dry, flor-aged white made entirely from Palomino, but grown and matured only in the cool, sea-misted town of Sanlúcar de Barrameda at the mouth of the Guadalquivir. It is, in effect, Fino by the ocean — the same biological ageing under a veil of living yeast, but rendered even paler, tangier and more delicate by the humid Atlantic breezes, giving camomile, salted almond and a briny, bracing seaside lift.
