Jerez Fino (Palomino)

Jerez Fino is the purest, most delicate face of Palomino: a pale, bone-dry fortified white from Jerez de la Frontera in Andalusia, aged biologically under a living veil of flor yeast. Where the grape alone is soft and neutral, the flor rebuilds it into something bracingly saline and savoury — green almond, bruised apple and a yeasty, doughy, umami bite over a clean, tangy, mineral finish.
