Barolo is the king of Piedmont and the most celebrated expression of Nebbiolo: a deceptively pale, brick-garnet red that is ferociously tannic and high in acid, perfumed with tar and roses, dried cherry, truffle, dried herbs and licorice. It is an austere, savoury, long-ageing wine that demands rich, fatty, umami food rather than easy sipping.
