Bullas is the cooler, higher-altitude face of Spanish Monastrell: a small, old-vine Murcian appellation west of Jumilla and Yecla whose vineyards climb to 500–810 metres, where mountain elevation and a wide day-to-night temperature swing tame the grape's usual power. The result is a fresher, more perfumed dry red — plummy dark fruit, garrigue herbs and violets over softer, silkier tannins than its sun-baked lowland neighbours.
