Grüner Veltliner is Austria's signature white wine grape and the country's most widely planted variety, the backbone of the dry whites of the Wachau, Kamptal, Kremstal and Weinviertel along the Danube. It makes a crisp, high-acid, medium-to-full-bodied dry white marked by a distinctive crack of white pepper, bright citrus and green, vegetal notes often described as green lentil, celery or fresh herb. Lighter, zesty versions are everyday thirst-quenchers, while ripe single-vineyard bottlings from steep Danube terraces are concentrated, mineral and capable of ageing for a decade or more. Above all it is prized as one of the most food-friendly white wines in the world, its peppery acidity cutting through everything from asparagus and schnitzel to delicate fish.
