Grillo

Grillo is a Sicilian white wine grape, long the traditional backbone of the island's fortified Marsala and today the source of crisp, dry, food-friendly still whites. A heat- and drought-tolerant variety suited to the hot, sunny vineyards of western Sicily, it ripens to good sugar while holding fresh acidity, giving wines that balance ripe stone and citrus fruit with a herbal, saline edge. Once in decline, it has been rediscovered and replanted across Sicily as a serious dry white. Bright, structured and savoury, it is a natural partner for the island's seafood and an emblem of modern Sicilian wine.
