Greco di Bianco is a rare, honeyed dessert wine from the Ionian coast of Calabria at the very toe of Italy, made from Greco grapes that are picked ripe and then laid out to shrivel in the Mediterranean sun before pressing. That partial drying concentrates the sugar and flavour into an amber, unctuous passito of dried apricot, orange and bergamot peel, honey, almond and wild Mediterranean herbs — one of the oldest and smallest-production sweet wines in Italy.
