Gavi is a dry white DOCG wine from south-eastern Piedmont in north-west Italy, made entirely from the Cortese grape in a small zone around the town of Gavi, close to the Ligurian border. It is crisp, light-bodied and high in acidity, with citrus, green apple and white-flower aromas, a clear mineral streak and a signature hint of bitter almond on the finish. Pale straw with green glints and usually a modest 11.5 to 12.5 percent alcohol, it is a fresh, unoaked, food-friendly white. Long the house wine of the seafood restaurants of nearby Genoa, it is one of Piedmont's most celebrated whites in a region far better known for its red Nebbiolo.
