Beaujolais is the light, juicy, irresistibly drinkable red of southern Burgundy, made from Gamay: a pale, bright ruby wine bursting with red cherry, raspberry and crushed strawberry over a floral, almost bubblegum lift, carried by high, mouthwatering acidity and feather-light tannin. Best served slightly chilled, it is the great versatile gulping red — easygoing enough for charcuterie yet fresh enough to flatter even fish.
