Valpolicella Ripasso

Valpolicella Ripasso is the "baby Amarone" of the Veneto: an ordinary Corvina-based Valpolicella given a second life by re-fermenting it on the still-warm, sugar- and flavour-rich pomace left over from Amarone. The trick trades some of straight Valpolicella's light, sour-cherry freshness for extra body, warmth and alcohol, layering dried cherry, cocoa, raisin and sweet spice over the grape's bright acidity — a fuller, richer red that stops short of Amarone's raisined power.
