Blanc de Noirs

Blanc de Noirs is Champagne made entirely from black grapes — "white from blacks" — the broad, red-fruited, structured counterpart to the lean Chardonnay-only Blanc de Blancs. Pinot Noir and Meunier are pressed gently enough that no skin colour is extracted, so the wine comes out white while keeping the weight, grip and strawberry-and-red-cherry fruit of the dark grapes.
