Champagne is the benchmark traditional-method sparkling wine of northern France: a bottle-fermented blend of Chardonnay, Pinot Noir and Meunier with fine, persistent bubbles, bracing acidity and toasty, biscuity complexity. Made by the methode champenoise on chalky soils around Reims and Epernay, it is the wine the rest of the sparkling world measures itself against, and the umbrella style under which Brut, Extra Brut, Blanc de Blancs and rose all sit.
