Cava is Spain's traditional-method sparkling wine, made overwhelmingly in Penedes in Catalonia from the native white trio Macabeo, Parellada and Xarel-lo and given its bubbles by a second fermentation and ageing on the lees inside the bottle — crisp, dry and citrussy with green apple, almond and a faint earthy-nutty depth, the great-value answer to Champagne.
