Vinsanto (Santorini)

Vinsanto is Santorini's traditional sweet wine: sun-dried Assyrtiko (with the local Aidani and Athiri) whose grapes are laid out in the Aegean sun until they shrivel to raisins, concentrating their sugar into a dense, amber dessert wine. Long-aged in oak, it marries intense dried fig, date, caramel and orange to the racy volcanic acidity that keeps the sweetness from cloying — an unctuous yet remarkably fresh wine capable of ageing for decades.
