Santorini

Santorini is the volcanic benchmark for Assyrtiko: a bone-dry, unoaked white from the sun-scorched Aegean island, grown on ash and pumice by ancient ungrafted vines coiled into low kouloura baskets. It marries searingly high acidity to lemon, grapefruit and quince and a smoky, saline, wet-stone minerality that tasters read as the taste of the volcano and the sea.
