Wild thyme (Thymus serpyllum) is a low, creeping cousin of garden thyme — a mat-forming Mediterranean and Eurasian subshrub whose tiny leaves carry the familiar warm, herbal-phenolic scent of thyme in a gentler, sweeter, less biting key. Gathered from sunny hillsides across Europe, western Asia and the Levant, it is the herb behind the finest thyme honeys and a traditional component of za'atar and other Eastern Mediterranean blends.
