White sapote is the round, apple-sized fruit of Casimiroa edulis, an evergreen tree of the citrus family native to central Mexico and Central America. Despite the name, it is unrelated to the true sapotes; its custard-soft, ivory flesh is prized for a sweet, mild flavour likened to banana, peach and vanilla.
