White pepper

White pepper is the same fruit as black pepper — the drupe of the tropical vine Piper nigrum — but harvested ripe and stripped of its dark outer skin, leaving only the pale inner seed. The result is a hotter, less aromatic spice prized in pale sauces and East Asian cooking, where its cleaner colour and earthy, slightly fermented "barnyard" note set it apart from black pepper.
