White Negroni

The White Negroni is a modern-classic riff on the Negroni — gin, the French gentian aperitif Suze and the white aromatised wine Lillet Blanc, stirred over ice and served in a rocks glass with a lemon twist. Pale straw-gold rather than glowing red, it keeps the bitter, spirit-forward backbone of the Negroni while trading Campari's orange-red bitterness for the earthy, floral bitterness of gentian.

Pale straw-gold, the White Negroni smells of earthy gentian root and candied citrus from Suze over the dry pine of gin and the honeyed, faintly grapey lift of Lillet Blanc. On the palate it is dry and bitter but in a lighter register than the red Negroni — a rounding honeyed sweetness from the aperitifs set against a pronounced, floral gentian bitterness and a bitter-orange, quinine edge — with juniper aromatics, a herbaceous freshness and a long, dry, bracing finish at around 26 percent alcohol in the glass.
