White chocolate is the pale, ivory member of the chocolate family — made from cocoa butter, sugar and milk solids but containing none of the brown cocoa solids that colour and flavour dark and milk chocolate. The result is sweet, intensely creamy and rich in vanilla and caramelised-dairy notes, melting smoothly on the tongue; because it carries no cocoa solids, several legal definitions hold that it is not, strictly, chocolate at all.
