Rye whiskey is the spicy, dry, peppery cousin of bourbon: an American (and Canadian) grain spirit built on a mash of at least 51 percent rye, which trades corn's round sweetness for a leaner, bolder backbone of clove, baking spice, dark fruit and a snap of black pepper. It is the original spirit of the classic American cocktail — the whiskey the Manhattan, the Sazerac and the old Old Fashioned were first built on — and it pours a warm reddish amber from time in charred oak.
