Spirit
Irish Whiskey
Irish whiskey is the smooth, light and approachable grain spirit of Ireland, most often distilled three times for an exceptionally clean, mellow body and, unlike much Scotch, usually made without peat — so it leads with honey, vanilla, orchard fruit and toasted grain rather than smoke, then is matured in oak for a minimum of three years.

by taste profile
Light-bodied, faintly sweet, smooth and gently warming, Irish whiskey leads with honey and vanilla over toasted cereal malt, with baked apple, pear and a soft creamy spice from oak; triple distillation and unpeated malt keep it clean and mellow, almost always free of the smoke of a peated Scotch. The single pot still style adds a creamy, oily, peppery texture. The finish is clean, sweet and warming at around 40 percent and upward, with the soft oak lingering rather than turning sharply tannic.
